Privacy implications of enabling E-SIM

Can someone explain like I’m five the privacy implications of enabling Esim?

I understand that you need to install the proprietary google Esim management to use it, but then apparently can disable the google portion but the Esim still works… what information does google continue to have access to after going through this process, if any?

the IMEI is exposed when using the privileged eSIM activation tool so Google would be in a position to scrape it however there is nothing there to suggest it necessarily does.
