mrnike yes I have such setup for about 2 years now. Physical SIM + eSIM work flawlessly simultaneously on GOS. During a call with one SIM you can not access mobile data of the other SIM due to physics. There is a setting though to activate the mobile data of the calling SIM only during calls and then switch back after each call, this way I have constant mobile data no matter what.
nodsocket You will receive calls from both numbers without problems, but you can only simultaneously use one. If you're on a call with SIM 1 and receive a call on SIM 2 (or vice versa), it simply won't connect. Just tested this and got silence on the calling device (no feedback like busy signal or mailbox), but I received an SMS for the missed call on SIM 2 after ending the call on SIM 1. This experience will depend a lot on your carrier, so your mileage may wary.
