Why is there no option to disable the stock camera, dialer, messaging, alarm apps etc. Many people use alternate apps. Why forcing them to use the stock apps only.

E.g., from the change log when the option for the camera was taken off (end of Jan, 2023):

Settings: add GrapheneOS Camera to list of mandatory components since only system camera apps can provide the media capture intents required by other apps on Android 11 and above (can still be disabled via ADB but we want to avoid easy ways to break the OS in the UI)

This is how I interpret the change log - the other apps you mentioned are part of the "list of mandatory components". And that's why to prevent the regular user from breaking the OS the devs turned that feature off.
As you know, Graphene OS has a minimal set of apps, so it is expected that most of them will be really needed and part of that "list of mandatory components".
Again, trusting the OS you put on your phone to a certain degree implies trusting the devs' judgments.

Oggyo Right! I think I will just leave them as they are and will get used to them over time. Overall, I am enjoying GOS very much (more than stock Pixel rom) except that irritating green dot popping up every 2 minutes letting me know Google Play Services has accessed my location.
