If you are able to create a google without ANY personal information then that account is kind of precious. So don't throw it away. Use it for your anonymous needs.
Generally I find creating anonymous google accounts very difficult. As long as you can keep them totally anonymous (no home/work IP association, no phone number, no communication with any work-people/family/friends, no "relatedness" to any personal info about you) then they are useful. But as soon as you are "revealed" from one vector or another then your accounts eventually get associated together. Unless if you are very careful, in which case you might be able to keep multiple accounts with "partial" identifying information that can still be considered somewhat independent. Having multiple accounts definitely has its uses as long as your identity is not associated with them.
If you are gonna be "revealed" to the accounts, then I don't know if having multiple revealed accounts would make much difference in the higher scheme of things.
One example: I have an android tv box and official android boxes force you to use a google account to even start the device up. If I had had an anonymous account I could have used it for it and only for that device. That way it would get associated with the members of my home (through IP) but not "definitely" to "me". And I would throw it away when I moved and sell the box as well. But now that box is associated with my identity (had to use phone number). So when I move I will not be taking it with me to the next house.
I also had to use a google account for school. IF I had had an anonymous account I would have only used it in school wifi environment and only use it from a VPN at home and that way I could have separated my identity from the school and my classmates and my occupation.
So there are uses.
