Login on a Big Tech website, or use an app instead ?

If I ocasionaly need to log in on websites like Amazon etc, my concern is that, once I give my real identity, I could be fingerprinted and any further browsing activity would be associate with my name.
It is better to use an app ? The app can be disabled when not needed.

I ALWAYS use browsers. There is no reason to use an app if there's a browser, especially if you use firefox/forks because you can download the webapp onto your home screen and its a web page that works just like an app.

As far as fingerprinting and cookies, I have a dedicated browser for a lot of things. For normal online shopping, banking, amazon, etc, I use Firefox. For buying guns/accessories, browsing forums, etc, I use brave. I also use mullbrowser for webapps.

This may not be as true as you think. Using an app gives away the Vanadium Webview fingerprint, which is the same as Vanadium's fingerprint I believe. Using a browser gives away that browser's fingerprint. As long as you are careful about managing those fingerprints I suppose you could do either. Some platforms have alternate front ends that could reduce their spying. Such apps and websites would be preferable to the original source. There are different strategies to manage this. Have a strategy.

Although one must not take too much comfort in thinking their strategy is definitely effective.

A rather important bit is to ensure you don't expose your own IP address, as that is a sure way to significantly isolate you.

I would create a separate user profile for using social media apps, or just use the guest profile as it deletes itself after use.
