Offline Smartwatch App

I "need" a smartwatch that has somewhat accurate health data and notification support. I saw that many recommend Garmin watches because their privacy policy seems to be the best. After some research, I found out that you lose most of the apps functionality when it has no internet access.The Galaxy Watch 5 seems to be a good device, but I found nothing about how much functionality the app has without internet access. I am okay with creating an account if it's possible to revoke internet access afterwards. Does anyone use the Samsung app offline? I don't want to sync my data with any manufacturer. Gadgetbrigde only supports devices I am not interested in. I would really appreciate your suggestions.

I am mostly interested in accurate health data and a interpretation of these statistics.

Personally I'm using the Huawei Watch Fit 3 together with Gadgetbridge (nightly).
Only concern I have so far, is the inability of Gadgetbridge to sync AGPS-data. So the GPS fix of the watch takes a long time when not connecting it to the original Huawei Health app regularly (via an extra profile) :-/

Health data, notifications and battery life are great though.
