All Apps suddenly gone but data still there PLS HELP

Hi everyone¨!

Altough I did have sometimes problems connecting to cellular, which was resolved with a restart I am very happy with grapheneos
But 30 minutes ago I restarted my phone and it just took like 15 minutes. At this point I forced it to shut down.
Then it started normally and I put it in the door of my car. 5 Minutes later I see the Graphene boot screen even tho I didn't do anything. Then, after it restarted, all my apps were gone! I then restarted again and it still looks like I freshly installed it. Background was still mine. So I checked the file explorer and all my files are still there! All app data, all pictures, videos and so on. Everything except my contacts.

What can I do to get it back to normal? This really disturbed my trust in the OS as I just went on a business trip and had to turn around because I don't even get normal phone service anymore neither with the physical nor with the E-Sim

By the way have you tried resetting the network connection instead of rebooting to solve network related issues?
It's under Settings -> Network and internet -> Internet -> press on that top right button (shaped like a circle)

UpStream I never did before but I tried when the apps were lost. Didn't do anything.
But this time I can't even connect to the phone network. Before that wasn't a problem it just said "no service" in german but it still showed me the connection strength
