Looking for iOS to GOS Recommendations

Switching from iOS to GOS. Looking to replace the following apps with open source versions that prioritize privacy and work on GOS. Any recommendations?

I also have installed Proton Mail, Proton VPN, Breezy Weather, Antenna Pod, Organic Maps, F-Droid, and Molly (which does me no good because no one I know is using it).
I am scratching my head about the following:
Texting (to communicate with 99% of people I know. Friends, family, work, etc)
Phone calls (I have a Mint prepaid SIM card and can use that to make calls. But would like a VoIP recommendation.)
eBay (does it work with GOS)

If you only want to use SMS, I recommend QUIK SMS. If you want to use RCS with Google Messages, read through this. And since your coming from an iPhone, be sure to Deregister iMessage or texts won't work well or at all.

Calendar: I use my email provider, you can use yours too
Notes: Obsidian for notes, and Notely Voice for recording and transcribing notes
Google Translate: Offline translator has OCR, can be set as your assistant to do on screen translations just by swiping and has recently added TTS for languages.
Spotify: I buy and download my music from Qobuz, and play it using Pixel Player. For streaming I think Apple music is the best for price to performance (single payment for hi-fi music, relatively cheap). There are YouTube music frontends too that people use, like Metrolist.
Voice Memos: Notely Voice works for me, has transcribing and summarizing locally.
I also have installed Proton Mail, Proton VPN, Breezy Weather, Antenna Pod, Organic Maps, F-Droid, and Molly (which does me no good because no one I know is using it): AntennaPod is awesome, podium has a nicer UI for podcasts imo
Texting (to communicate with 99% of people I know. Friends, family, work, etc): I moved people I know to Signal, but WhatsApp's encryption is endorsed by signal too, so not the worst option (which would be telegram).

I like Etar as a calendar and Offline Translator (dev.davidv.translator) a lot. For texting I have been using Signal (can't really get warm with Molly) for the past 6+ years and like it a lot. I'd say 60-70% of my contacts use it too and the rest works via RCS/SMS.

I recently switched from iOS too and was very sceptical but I have to say that I got to like GOS a lot. It's simple and well structured and gives me a feeling of full control. Wouldn't even want to switch back if the privacy/political implications were suddenly magically gone.
