Many of the default apps that come with GOS are out of date and they are currently working on replacing each one with an official GOS app. GOS is based on AOSP and many of these are AOSP apps.
It is recommended to get a new app for these functions:
- Contacts
- Files
- Gallery
- Calendar
The apps from fossify are a good start: https://www.fossify.org/apps/
There are buttons on that webpage to lead you directly to the play store or fdroid page to install it. Or you could use obtanium.
Furthermore, you can easily install apps that are currently on your owner profile over to other profiles via:
Settings > System > users > [select a user] > List available apps > Tap on apps you want to add to that user
Now that you have an updated contacts app, import your contacts.
Private space is just like a separate profile but much more convenient. For most users, an owner profile + private space would suffice.

For Private Space, it is similar: Settings > security > private space > install available apps OR Push the the plus sign at the bottom of the app drawer. (You need private space enabled and unlocked)
The grapheneos.org site is rather verbose with an FAQ and how to enable RCS, esims, etc under the "usage" section.

Save backups of contacts, messages, photos, etc. and don't let your battery get too low.
