LawnChair asks for Network Permission and Notification Permission. But you can denied it and all other permissions. And also have all "Exploit Protection" settings enabled for LawnChair and it still works fine.
I'm no expert either so I just assume everything I do that's not Bone Stock GrapheneOS is lowering my Security/Privacy... IDk
Ive been NOVA Launcher user since forever and I hate using a phone without NOVA Launcher. But company was sold and I don't trust NOVA Launcher in the slightest anymore even with no Network Permissions and everything else GrapheneOS allows us to control.
So I'm using LawnChair now. It has almost all the features I love from NOVA. It has the Features that are a necessity to me. Plus its OpenSource. I think the Launcher will only get better as more people from NOVA migrate over.

Stock Pixel Launcher is unusable for me.
I need to have 7 column and 8 rows.
I need to be able to use a icon pack and set individual apps icons that I don't like to whatever icon I want.
If AOSP/Stock Pixel Launcher added just that I would be able to use it.
