Why not be able to run different instances of an app in the same profile?

Would it not be possible to run two different instances of the same app in the main profile? I understand oxygen os is able to run, for example, a second version of whatsapp with another phone number in the same profile, even though the second one technically belongs to a second profile.
Why can't GOS achieve the same?

You can do it in WA itself, no need for any "dual messenger" feature.
And you're mixing, it's not the "2nd instance" of the generic app and never wasn't.

thmf I don't think work profile is available on GOS, at least I tried Shelter/Island before and it said something about administrator rights. Maybe it's only available in the owner profile

Work profile is absolutely available in owner profile on GrapheneOS. Private Space profiles available in owner and user profiles.
