I'd really like to record the location of the images I take, but since I send some of those to others or post them, I am worried I might accidentally expose my location. Is there any way I can confidently share images like that? Being able to do the same from the file picker would be a big bonus too.
As LeslieFH already mentioned, sending photos via Signal/Molly is a convenient way to remove EXIF data. If you want to send the photos elsewhere (not using Signal), you could use Signal "Note to Self": Downloading an image shared in "Note to Self" also gets EXIF data stripped out.
Depending on which gallery app you use, it may already offer this feature build in, e.g., Fossify Gallery.
If you send photos by email, your service may offer this feature too (Proton for example offers metadata removal).
Otherwise, you can use special tools like Exif-eraser (also available via Accrescent). Exif-eraser also works from file picker dialogue.
Note: Most tools remove EXIF data from photos but not from videos.
