Why do so many apps request sensor access?

Like this newspaper app I have, have network obviously but also sensors? I feel like removing sensors on all apps don't need it specifically, but also have a poor understanding of what these sensor permission do and why apps need them.

Is there a help section resource or such that I can read?

The Sensors permission can be set to be disabled by default for user installed apps in Settings > Security & privacy > More security & privacy

I recommend also doing this for Private Space using this app:

Install, open and scroll down to 'Settings', search for 'securitydashboard' (one word, no spaces)
Tap it, now you're in the security settings for Private Space.

Only GOS has sensors as a permission. Every app expects it to have this access by default. Tons of apps work without sensors permission

They get a lot of information on how you're using your phone via sensors.
If you're reading the newspaper app lying in your bed for instance.
They also can see the way you're traveling.
Walking, cycling, public transport, car...
You also should turn off running in the background and background data usage.
