It's more secure than regular Android, and isn't designed to share data about your behavior with the company that sold it.
After that it gets complicated fast. If you want to use the regular set of regular Android apps (GMail, Google Maps, apps from the Play Store), there are decisions to be made about how to balance convenience against privacy. Those decisions may well require reading through "walls of text". Google Pay, Samsung Pay, etc., don't work and probably won't ever. Curve Pay currently works in some places. At the moment, RCS works on some carriers and not others.
It may be a good idea to itemize what you might want to achieve via GrapheneOS and how much time you are willing to invest. Unfortunately, GrapheneOS is not a way to push a button and then go about business exactly as before except with more security and privacy.
