A "factory reset" won't actually return the device to the way it was when it left the factory (for example, the device won't suddenly be running Google's stock OS). But it will completely destroy the user data partition, so that all app data will be gone, all settings will be reset, and the post-install setup wizard will be launched.
A "factory reset" can be done without deleting eSIMs.
