Using something like Tasker and giving it device permissions, you can define triggers to do whatever you wish e.g. lock the phone / reboot / factory reset.

For example, disconnecting from your smartwatch for e.g. 1 minute could lock the phone, for 1h could reboot it, for 1 day could factory reset it.

Note that device-admin is only really necessary for locking the phone. Rebooting and factory reset can be done by making Tasker dial special (MMI) phone numbers (c.f. https://www.wikihow.com/Android-Secret-Codes#Backup-and-Reset-Codes)

For legal purposes, this is a joke, but I'm hoping to illustrate an important point: digital security cannot always compensate for an absence of physical security. If you're in a high-risk space, dont have/use/open a device with sensitive information on it

The best you can do is set screen-lock to a short time period to stymie immediate access, then configure auto-reboot to a short time period to ensure BFU state will be reached in short order. I do not endorse suggestions to grant admin privileges to third-party apps for the purposes of finer lockdown control

If it's seized by thieves you can use Google Play theft protection and give it admin permission (and sensors etc). If it's seized by le there's nothing you can do.
All other suggestions are bad.

Many comments have provided interesting and useful solutions. Here are some more to consider:

Use a secondary profile as your main profile, with USB-C port set to charging-only.
Set up app locks for as many apps as possible.
Put frequently used but more sensitive apps in Private Space, only unlock when you're sure no one's gonna snatch it.

The goal is to minimize the data available when they snatch it. But now that you've thought about the issue, being aware of your surroundings is the most important way to mitigate the risk.
