Desktop mode, available on Pixel 8 and newer devices, still has some rough edges but with recent improvements and a bit of care is an ever more viable option.
For image manipulation there are various choices. Krita is likely the most fully featured, works well on tablets and desktop mode and the android version is available via Play Store or Aurora Store.
For web browsing vanadium is a fine browser which works well on larger screens.
For code development there are apps like Acode, some people use VSCode web in vanadium.
Supported Pixels also have the option to run a full debian virtual machine via the Terminal app and then can use all the coding tools available for that platform. Its a bit prone to breaking when doing apt upgrade so good backups are wise. Clearly the debian environment has less security, but can isolate it from your files by using it in a secondary user profile.
Its also possible to run other debian GUI desktop apps via Terminal app if you need them. The Collabora Office Android app has reasonable support for larger screens, but its not as fully featured as the Libre Office debian application.
