You should be able to set Ente as your default gallery app without too much trouble. The way I know to switch gallery apps involves "disabling" the default (AOSP) gallery app.

To disable the default gallery app:
- Open the app drawer
- Long press the default gallery app and then tap "app info" in the pop up.
- In the "App Info" screen tap the "disable" button that"s below the app icon and name. A second confirmation and caution pop-up requires a second tap to confirm app disabling.
Next time you open an image file GOS should ask you which app you'd like to open the file with, and if you'd like to open images with the Ente app just once or always.
*️⃣ Disabling an app removes it from your app drawer. If you'd like to re-enable a disabled app go:
Settings > Apps > See All Apps > Tap the disabled app from the app list > and finally tap the "enable" button in the app's app info screen.
