Does rebooting and/or removing a guest profile erase all traces of it?

I'm curious about this.

Maybe this question can be applied to standard profiles as well.

Once the guest profile is gone, what are the traces of it, if any, on the phone storage?

Would it be possible to recover timestamps of when the guest profile was created, when it was last used, etc.?

Maybe it isn't as stateless as I thought it'd be, but better than nothing I guess

Technically speaking yes, not the data, but the fact that a guest profile existed.
But that will require you to give your unlock phrase to your device and allow an examiner to connect to it.
If you gave someone an unlocked device, consider that everything you done on it will leave traces.
