Can I uninstall preinstalled apps such as Vanadium, and install other FOSS app?

Before I make a switch I want to ask title. If this is locked down, just like Android, can I disable/remove it with ADB then?

e.g.,
Vanadium -> Cromite (Adblock+UserScript support)
Contact -> Fossify Contact
Dialer -> Fossify Dialer

If I can uninstall anything except the core OS, this will be great!

You can use these alternatives just fine without using ADB to remove the default AOSP apps (which is likely to break functionality)

whatname whatname no, the things you describe as apps are not apps but system level components operating in the app runtime required to handle intent specific instructions for AOSP and OS based on it to function. They are part of the "core OS".

To 'replace' them would require you to take GrapheneOS fork it and build your own non GOS derivative with your desired 'apps' and then maintain those apps yourself.
