I want to know what those options do exactly and which should I use.

Internet connectivity check: why would I use GrapheneOS and why not?
Why would I use Standard (Google) and why not?

But the way I see it is very simple:

use GrapheneOS servers if you don't want to use Google's
use Google's if you don't care or want to blend in better (i.e. make it harder for your ISP to guess you're running GrapheneOS if you don't use a VPN)

I just want privacy and security. Blending in, trying to be anonymous and make things unlinkable to real life identity is hard, inconvenient and exhausting. So I should use GrapheneOS proxies?

Personally, I don't think it matters which one you use, but GrapheneOS has a better privacy policy.
