Privacy-friendly ereader apps

After years dreaming about getting a tablet for the primary purpose of comfortably reading my huge collection of PDFs, I realize I need a bookshelf app, something with more ereader-like functionality than GOS's PDF Viewer, notably ease of navigation and a means of organizing documents by author, subject, etc. Naturally, as a GOS user, I'm looking for something that is privacy a respecting.

Would anyone have a suggestion? I don't see any candidates in Accrescent.

Elgoog I would highly recommend looking into something self-hosted. Audiobookshelf and Caliber servers are awesome.

You probably want Librera F-Droid version, also available directly from Github.
On a side note I really, really tried to use the PDF Viewer that comes with GOS but unfortunately it has an extremely unfriendly UI. Try opening a document with many pages on it and then jump to a page. The simplest way would be to display a box where you can type a number of the page you want. PDF Viewer instead displays a tiny 3-row wheel where you are supposed to scroll 50 times to select the page you want to skip to. I can guarantee you that when scrolling those 50 times you will eventually tap outside of the tiny scroll wheel and will have to start from the beginning. If I had a Github account I'd seriously consider opening an issue on this.
