You are probably referring to Mobile Network Security.
This is an Android feature and also works on Pixel 10 devices running GrapheneOS.
It's in Settings>. Security & privacy> Mobile network security. There you can toggle on Network notification and 2G network protection:
Does anyone here know if the P10 series with GOS will block Stingrays?
The feature doesn't block stingrays in the sense that you are immune to such attacks. What the feature does:
Network notification
enables or disables the display of system notifications when a user's device is connected to an unencrypted network or when the device exchanges device identifiers such as IMSI or IMEI with the network.

2G network protection
This toggle
contains additional entry points for 2G toggle for each of the SIMs in the device. Each 2G toggle enables or disables device's 2G connectivity for the respective SIM. Each of these toggles reflect the same state as their corresponding 2G toggle under SIM Settings in Settings.

In GrapheneOS, this can be configured even more granularly in Settings> Network & Internet> SIMs> Name of your SIM> Preferred network type.
You could set it to LTE only or 5G or LTE only which excludes 2G and 3G.
