You don't need to worry about that; it seems impossible to fry your phone just by making mistakes during GrapheneOS installation.
I would advise taking a slower approach to the change—especially if you are impatient and don't want to read up on it thoroughly first, as de0u suggested.
Start with just the Owner Profile, install Sandboxed Google Play, and download all the apps you currently use (and still want to use) from there.
Use this setup for a while and you'll find that, even though you've already taken a big step forward in terms of security and privacy just by installing GrapheneOS, it doesn't feel much different from your device before. From there, you can try out other things (but you don't have to if it's not necessary/desired) and go deeper down the rabbit hole.
And if you don't like GrapheneOS, you can simply switch back (just don't forget to backup your stuff before switching back and forth).
