Yes, and the predecessors with Lightning port also work great with GrapheneOS.
I bought the AirPods Pro (2nd gen.) in 2022 and use them on the Pixel 7 Pro/8 Pro/9 Pro XL with GrapheneOS.
For occasional firmware updates, it is sufficient to connect the AirPods to a MacBook in the same way as for charging the battery.
Under Settings/Bluetooth you can also see your connected AirPods and after clicking on the (i) the firmware version is displayed, among other things.
This is currently version 7E93.
