How much can Google/Apple actually see?

I'm still deciding if a Pixel+GOS is worthwhile for me as I still intend to use Facebook/Insta apps on a phone for business social media, and if I can figure out GOS install and setup or buy from somebody else

I came across this supplier and blog - https://simplifiedprivacy.com/they-see-everything/index.html which says;

With a stock version of Android or iPhone, Google/Apple can see:

–Everything you say and who you said it to on every app.
–All push notifications you get
–24/7 location tracking with who is standing next to you
–You don’t own anything, Google or Apple see all passwords
–You don’t own cryptocurrency, they see your private keys

Is this actually true or hyperbole to get you to buy a phone?

Hyperbole, especially if your wallet uses a keystore.

It's not 24/7, especially if the device isn't on you, but also if its offline.

No, it doesn't know what you say or what you write in every app.

You can choose to not use Gboard, but even then, I doubt it sends passwords for analytics.

Now the real issue: Google Services has privileged access, its a problem that GOS solved with sandboxed google play, but the framing here is misleading.
