Which options make more sense than others depends on your goals. I don't understand what is meant by using Chrome to run a calibration tool "completely [defeating] the purpose of using GrapheneOS", because different people have different purposes!
For example, some people running GrapheneOS install Google Play in the owner profile, and log into a genuine Google account (not a fake account) and never log out. Being tracked by Google to that extent does not "defeat the purpose of using GrapheneOS" for those people.
As another example, I purchased my Pixel device online from Google's store, providing my actual name and address. Thus Google associated the serial number of my device with my actual name and address. That has some advantages! For example, if the device needs warranty service I won't need to jump through hoops to prove that I bought it. Being inventoried by Google to that extent does not "defeat the purpose of using GrapheneOS" for me.
Because it is not yet clear which concerns are posed by using Google's recalibration tool in Chrome I don't feel that I can provide advice on that option compared to others.
