Ive seen several people talk about open board key board, but I cannot find it on fdroid. Was it renamed? Discontinued? Am I looking in the wrong spot? Does it support speach to text?

I recommend HeliBoard, it's a fork of the nowadays unmaintained OpenBoard.

For speech to text you can install a speech to text engine for example Transcribro from Accrescent app store.
I recommend FUTO keyboard.
Second on FUTO keyboard. Its by far the closest and best alternative to GBoard (my previous favorite keyboard) in terms of features and overall usability. It has a lot of the comfort features of regular keyboards with the privacy of FOSS keyboards (it doesn't even ask for network permissions).

24 hours ago I settled for Foss keyboard which isn't bad with trasnscribo. With that being said, I just installed Futo and it's perfect! I love they are privacy focused! And you can get it thought fdroid store. Thank you for the suggestion.
