If you use an anonymous Google account, created without any personally identifiable information linked to you, there is generally only very few that apps, including Play Services, can collect and access. It pretty much boils down to your usage at that point. Of course apps can collect what you do inside of them, if they want. But outside of that, they are heavily restricted and confined by the app sandbox.
But of course, if you really want to avoid Google and any of its data collection as best at possible, you need to not use any apps from the Play Store, at all.
