This sounds like you still haven't let it reach 100% + shield to finalise the recalibration. If you unplug the phone before you see the shield icon beside 100% charge then you have not waited long enough, thus your phone will continue to charge past 80% until it reaches 100% + shield. Once that happens then, if left plugged in, it will discharge the battery until it hits 80% + shield.
Quite often, those reporting issues with this feature have misunderstood how it works. This may or may not be the case here.
