If I encrypt a micro SD it can only be accessed on the device that encrypted it if the micro SD is caught and secure enough or is it better not to use it?

Since you didn't provide much information (as already mentioned by Snibby ) I have to guess:

GrapheneOS only runs on Google Pixel devices. If a really quick Google search doesn't fool me, there is no Google Pixel that supports MicroSD cards.

If you want to store files externally, you could use a USB-C drive (or USB-A + adapter), for example:

You could create an encrypted vault on the drive using Cryptomator, for example, and use it to back up and transfer files between devices (Cryptomator runs on Android, Linux, Windows, macOS and iOS).

If Pixel Phones supported SD cards would it be a security risk since someone could tamper with it physically and when u unlock the phone it would be compromised

Your post is lacking lots of information for it to be answered meaningfully. Encryption =/= Encryption. There are so many ways.

Also, none of the supported phones even have a microSD slot, so you're out of luck in that regard anyway.
