adb otg app is different to using adb from a PC. You use commands without prefixing with abd shell

Our normal advice about using adb stands. It opens up a huge security hole and is best avoided except for when doing development work.
You would expose the device to far less risk by transferring apk files onto it via usb storage.
You are not being particularly clear, and this is not the place to discuss that OS, but, CalyxOS doesn't reduce the amount of data going to Google. Stock GrapheneOS sends no data to Google
