Realistically, it depends on your use case and threat model.
For example, I stick Google Maps and Android Auto into their own dedicated travel profile along with Uber & Lyft. This profile has all of the google location features enabled, a dedicated Google account, and is only used when I need the specific apps in question. Note that it doesn't run in the background either.
Another profile contains social media apps tied to my real identity.
Another contains shopping apps.
I have a default profile that is used for anything that doesn't need special handling.
Ultimately though, you need to decide your own threat profile and why you are using GOS in the first place. How you should set up your device if you are running a dark web market is very different from how to set it up if you are a law abiding citizen who just wants a secure smartphone that spies on them somewhat less.
