Personally, I think trusting Apple to not spy on what you're doing is just as crazy as trusting Google, Microsoft, etc. to do the same. It feels like they're all very much playing the same game.
And I honestly feel like Google gets kind of a bum rap, much more than the deserve. Of the big tech players that want to spy on you, they're one of the only ones that have an ecosystem that's open enough to allow users to strip out all the creepy spying stuff. If Apple is spying on you, it's not like there's a GrapheneOS iOS version (or any other alternative OS). You're just stuck with the spying. Google at least makes it possible to get rid of it.
