In addition to my previous post, here is a detailed list of which settings and app data were or were not transferred. In my opinion, it is totally illogical what was transferred and what was not.
(I can only make statements about settings that I have changed. I can't say anything about settings which I left as default.)

Contacts, call list and SMS
All contacts, the call list and all text messages were transferred. No losses.
The system SMS app displayed an error message that the app should be checked for updates because it is for an old Android version. In my opinion, the message makes no sense because on both devices there was GrapheneOS with build 2024091900. However, after clicking away this message, the app worked as normal.

Photos and files
All files in the selected folders were successfully transferred. However, in folders in which the system has already created a .nomedia file, there were now two .nomedia files. Therefore, no data is lost if a file with the same name already exists in the target system.
Empty folders were not transferred.

Apps
On the start screen, all the apps (without Vanadium) were displayed as before and had the original order.
What surprised me was that apps for which the backup was not actually permitted (Firefox, WG Tunnel) were completely transferred (“device-to-device backups”).
In the case of Firefox, all data including bookmarks, history and extensions were transferred and WG Tunnel was also able to re-establish the WireGuard connection without any problems. Only the authorizations had to set again, but this is queried automatically. (If the Internet connection does not work, it may be because the “Block connection without VPN” setting is active).
For all system apps such as alarm clock (alarm time, time zone), calculator (history), GrapheneOS camera, Vanadium (bookmarks), etc., no settings or data were transferred. So, you had to set them again.

Neither settings nor data were transferred for AntennaPod and OsmAnd~. So, they had to be set up completely from scratch.
With Moonlight and a nutrition app, the data (streaming connections and histories) was transferred, but the settings in the apps were not transferred. For example, I had to set Moonlight to stream at 30 FPS instead of 60 FPS and I had to re-enter the login details for the nutrition app.
For other apps such as F-Droid, NewPipe and a few more (which I won't list for privacy reasons), all settings, histories and data were transferred. Only permissions had to be reassigned.

Settings
SIM settings were not applied (therefore roaming was allowed again).
All Wi-Fi connections were transferred. Except for the connections that the password is incorrect. I was also unable to transfer these manually using QR codes. You had to enter the individual data manually.
Wi-Fi hotspot and password were transferred.
The remaining network settings and the setting “Use per-network randomized MAC” (now again per-connection) were not transferred.
Bluetooth devices were not transferred and had to be paired and set up again.
Settings for the default printer service were not transferred.
The settings, which are the default apps, were transferred.
App authorizations were not transferred and had to be set again.
Notification settings for the apps were not transferred. However, “Do not disturb” schedules were transferred.
Battery (charge indicator in %) was transferred.
Sound & vibration settings were not transferred (except schedules, see notifications). The volume settings were not transferred.
Display settings (permanent dark design, low resolution and automatic rotation off) have been transferred. Text on the lock screen has been transferred.
Accessibility settings were not transferred.
Quick selections were transferred.

Security/Exploit protection settings (automatic reboot, automatic Wi-Fi switch-off) were not transferred.
Setting “Native code debugging” was not transferred.
Trusted CA certificates were not transferred.
The setting deactivated “emergency SOS” was transferred.
System
Language setting for keyboard was not transferred.
Activated developer mode was not transferred.
I also had to create “other users”. (I had not made any backup of them, so I could not check what was or was not transferred).

If anyone asks what is with WhatsApp, Signal, banking apps and eSIM Unfortunately, I can't say anything to this because I didn’t have them on this smartphone.
