Apps like Vodafone, Amazon, Aliexpress... - privacy implications?

Realistically, how much data can these apps collect on me when they are installed with sensors and location rights revoked, versus uninstalling them? I don't use these apps all the time but I do use them sometimes and its annoying to have to install and uninstall them again. What do you think?

I'm no expert, but the list of installed apps is one thing they can still read. With App Manager I looked into the Amazon app and I think it can even read the names of the networks you are connected to. See this screenshot: https://pasteboard.co/43XsrH0iMi8H.png
Somebody correct me if I'm wrong.
For many apps I like to restrict any kind of background usage of data or battery, maybe this helps a little with the frequency of the telemetry.

I have to use the ebay app from time to time as its the only way to officially input a code a buyer gets to verify they received the bough goods when they get stuff I sell in person.

I have background data and battery usage retricted for the app and keep it disabled for the most time, only activate it input said code and afterwards i disable it again.
