Accessing through the browser gives them much less access to data from your device than an installed app would have. So, yes, there is some privacy and security benefit. You'll usually end up sacrificing some features, but that will depend on the specific apps, and your personal tolerance for inconvenience.
I'm pretty sure Uber will work via the web, although they don't really advertise that fact.
Spotify is likely to be more of a problem if you want it to stay running in the background & keep playing music, although that might be fixable with settings. You'll have the vey basic Vanadium media player widget, instead of the Spotify one. For me, I would not try to stream music via the web browser, it's just not a great experience, IMO.
