As has been mentioned, you can already disable USB-C at a hardware level, something that goes much deeper than software level, so you won't gain much. If anything, you're going to make it harder for yourself if you ever need to use the port for sideloading or anything else.
Then again, it's your phone so you are allowed to do anything you think is best yourself.
