Using your real sim burns your identity and location.
The real question is, do you care? Do you need to disappear? Are you willing to commit to a Faraday bag away from your home, never use your device at home unless on WiFi, the whole thing? It's all part of a package, because cellular networks know where you are whenever you're connected. So, regularly use it at an address that's associated with your name? Pretty obvious who you are, even if you do everything else right. That includes work too, by the way, depending on the size/location of your employer.
This is not meant to be an argument for nihilism, just that your willingness to accept the high pain in the ass factor will dwindle if you don't have a good motivator. I tried it, realized I didn't have a good reason, now use my real sims with Google Voice forwarding to MySudo. I needed reliability over anonymity. Works for me (but I'm not trying to leave an abusive partner, for example).
It'll be briefer to simply say, just because you can commit to this doesn't mean you should. Why do you want/need to? Not something you need to answer here, just something you should answer for yourself.
The other thing? A pixel 8 or newer with GrapheneOS is one of the most secure devices in the world with infinitely more control over privacy options than ios, burned or not. Something to keep in mind as a part of your decision making.
