GrapheneOS doesn't have an issue with app compatibility. Some apps with various issues can be made to work, this guide is very helpful when troubleshooting such apps https://discuss.grapheneos.org/d/8330-app-compatibility-with-grapheneos.
I noticed your list has a number of banking or finance-related apps, and they may check if the OS is Google certified for "security" reasons. Since GrapheneOS isn't certified by Google, those apps may simply refuse to work, sometimes displaying confusing or inaccurate error messages.

Of the other apps you listed, I know the following work on my phone last I tried:
- Google Drive
- Google office suite (I've only tried Sheets recently, but all of them should work with Google Play installed)
- Cryptomator works, but I've never tried it with Onedrive
