Default SMS & Phone apps VS Fossify apps?

What are the advantages of sticking with the default GrapheneOS apps as opposed to the Fossify alternatives?
I'm a big fan of the Fossify suite of apps but I wouldn't mind sticking with the GrapheneOS defaults if they offered greater protection and privacy.

I use a couple Fossify apps myself all installed with obtanium, but I still use the Graphene Phone app as it offers the option of call recording build in.

I do use the Fossify Messaging app as it has the option to block numbers. But I rarely use the messaging app as most of my text messaging is done via Signal and Whatsapp.

For one you add another trusted party to the mix in hopes that they don't sell out...ahem. Thus endangering your data given the permissions these apps require by their nature. Also there's the potential for increased attack surface if the code standards just aren't up there quality wise. Either way the stock apps will stick around because they fulfill crucial functionality 3rd party ones can't handle.
