People who use sandboxed Google stuff/social apps: Why?

None.

Onlyfun I see many suggest it to eliminate tracking, but how?

There isn't only one kind of tracking.

I am not an advocate of data-only SIM cards, so it might be best if somebody other than me presented that case.

43t34fg4 I spent many years of my life with very good reason to require excessive privacy measures. I was on copperhead OS before graphene. I used only FLOSS software as far as I could. I used no social media. I ran qubes OS on an old thinkpad. You know what it was? Fucking isolating. And fucking inconvenient. All of the time. Every educational institution I studied at there were class Facebook groups I was excluded from. The people in my life organised and communicated events through Facebook. Same with work colleagues. I managed to convince very few people to use encrypted messaging apps, and the ones that did used them solely for communicating with me. So I was inconveniencing my friends, and essentially forcing my politics on them because it suited me. It's also hard to actually isolate oneself. Everyone who has my number in their phone who uses WhatsApp has uploaded my contact details to Meta without my consent. I run whatever I need to in order to effectively engage with the world in a way that suits me. It's a best effort to feel comfortable with my devices while not completely isolating myself. There is no "all or nothing". Gotta live in the real world to some extent. I'm just glad there are resources such as GOS to improve on the generally awful state of consumer choice in this sphere.
