Looking for help finding a few apps for GrapheneOS

Very soon I will be switching from iOS to Android, so I've compiled a list of apps I will want to have afterwards. However, I'm having trouble finding a few apps. Here are the ones I'm having trouble with:

Local AI: Since I will be using a Pixel 8, it would be nice to still leverage some of its AI capability. I'm having trouble finding apps that are capable of running models like LLaMA 3. If you have any suggestions, or have used any of these apps yourself, I would greatly appreciate it.

Code editor: I code in Python and Java, and it's nice to be able to code while I'm away from my computer. A lot of mobile code editors are restricted in functionality (such as what can be imported), so it would be nice to have one without those restrictions. This isn't a necessity, but it's nice to have.

Packet monitoring: I use Wireshark plenty, and I'm looking for something similar for my phone. This may be especially difficult, since GrapheneOS would likely prevent the app from having full access to network traffic. Is this possible to do on GrapheneOS?
