New and happy GrapheneOs "user" better late then never still not use the device because try to understand and work all settings, online and here I find a lot of answers, but I see every video with tips, and settings they have color icons, mine are black/ white and I try 2/3 days to change or find a answer, please advice.

Second, how van I check the version GrapheneOs in my device? I find the Android 13, but for example now latest update is TP1A.221005.002.2022101600, how to see if this is already in my device?

If I understand what you mean, change your wallpaper if you haven't already:

Settings > Wallpaper and Style > Change Wallpaper
then
Settings > Wallpaper and Style > enable Themed icons

Settings > About phone > Build number
The 10 numbers at the end are the release date if you haven't already noticed.

Settings-Wallpaper and Style-Change Wallpaper brings me on a page choose my photos or on device wallpapers...
but then I just back to settings..
Settings-Wallpaper and Style- Enable Themed Icons doesnt bring color to them...

If you mean colored icons like in this picture, then that's how I enabled it. Maybe try another color scheme if they're still black? If you mean something else, then I'm not sure how you'd achieve that.

If you like the original icons' colors then disable the themed icons option. GrapheneOS's default apps are black and white unless you use the themed icons.

I quess I know.... I didn't add apps yet, but now just 2 from Proton, both are in color.
