[deleted] the Ring app will probably need internet access to connect to the doorbell, therefore yes you probably want to do something about your privacy. TrackerControl, NextDNS or VPN apps like Mullvad allow you to block some connections on the DNS level (TrackerControl will use up your VPN slot, so you can't use it alongside Mullvad, IVPN etc. in the same profile).
Much more important in my opinion is to cut off access to your data for the Ring App in the first place. The Sandbox, Scope Features and Permissions will help a lot, and the app can't send data it doesn't have. Profiles will help in the way that the Ring app can't share data with other apps or see what other apps you have installed, but these benefits might be negligible compared to the inconveniences that come with having multiple user profiles, especially if you check the camera feed of your doorbell often. Also remember that if you used your iPhone on the bell before, everything was sent to Amazon in the past and you're only preventing leaking more information in the future, so don't stress too much about it.
I'd probably stick to one profile and cut off the app as much as I can if I were you. In the long term you might want to say goodbye to the doorbell anyway after you had a look here and here and many other reports on things wrong with Amazon doorbells. Depending on whether the camera is facing any neighbor houses, they might also be able to sue you for privacy invasion (depending on your country's laws). But that's just my 2 cents, and most people who use those doorbells are not even thinking or trying to do something about the privacy ramifications.
