It does work but you need google play services to get push notifications. You also need a separate device (like a stock android phone, iphone, ipad) where you have to buy your mysudo subscription and keep making your payments from.
You then would essentially clone that mysudo account from the 'stock' device to your grapheneos device.
I didn't like that 'unclean' setup nor did I want to support a company that doesn't play nicely with grapheneos without jumping through a bunch of hoops, so I went with jmp.chat and their great cheogram app.
In terms of giving out your real SIM number vs. using VOIP. I definitely like the idea of VOIP but it is costing me more money. I still have to pay a traditional carrier for data service (which happens to also come with unlimited talk/text but I just don't use those two features), then I pay jmp.chat $5 a month for 120 minutes which is hardly enough for me so I pay additional overage charges. Then I pay them another $3 a month (I think) for a secondary number and another $3/month for a third throwaway number. So I end up paying for my normal cell service and approximately another $15-$20/month to jmp depending on my usage that month.
I think Bazzell talks about two primary reasons to use VOIP. One is to prevent SIM swapping (which is more of a risk if you use your number for 2FA) and the other is to prevent location tracking via the phone number you publicly give out. I like the idea of the second one, because if someone (lets say a private investigator) tried to lookup/purchase the location history of a phone number that you are known to use, they would run into a VOIP company that doesn't have that data as it doesn't connect to SIM towers. But I'm not sure if this is what most people here recommend/do as maybe it is a step too paranoid? I certainly like the idea of simplifying and going back to just 90% of my calls to friends/family being with my SIM phone number and 10% of 'junk' calls getting a throwaway google voice number.
