excited to get grapheneos soon. Does anyone have a recommendation for blocking apps from opening and not being able to easily bypass it? On IOS you can use iMazing and supervise your own device. I am able to block safari and have way better control than "screen time" (preventing the app store from downloading any other browser, etc)

Your first step should be realizing that you have a problem. Rather than "enumerating badness" by blocking apps you think caused your addiction but may be necessary for your succesful functioning (no one can get by without a web browser), set your working environment in a restricted manner. Try and stick with it and reward yourself for achieving your goals.

I have used iMazing to create profiles for iPhone that restrict use of apps or services. Universal Android Debloater can also disable system apps such as Vanadium or disable the system web view package that allows apps such as MySudo to have an embedded browser built in. It's not recommended by GrapheneOS but it will work (for now at least). I turned my old Pixel 5 into an iPod-like device that only has a music app that can stream music online yet has no ability to view the internet like it's 1995. Just a fun project so anyone at my house can use it like a jukebox. It has no passcode or other apps and
is connected to my home's speakers.

Ok , it was just a thought as Google preinstall this app as default and should be be compatible with Graphene
