What I also tried this morning:
Logging into another profile (almost no apps installed): First looked promising but after a while the same issues arise
Disable the eSIM and use the regular SIM: No connection at all possible (No cellular signal)
Even after rebooting, the whole cellular was still gone. Very strange. Then I did the following (without rebooting):
Disable the regular SIM and use eSIM only: Connection works fine, very low latency, no peaks and all looks stable - speeds are 150 Mbps down and 9 Mbps up. The latency only goes up when up- or downloading files (which looks quite obvious to me).
After about 10 minutes I re-enabled the regular SIM again, but it does not want to come up again, still the exclamation mark stays there. It kept showing the exclamation mark until I switched the preferred network type from 4G only to 4G. Kinda weird. When switching between preferred network types for the physical SIM, the internet drops, even though the mobile internet goes through the eSIM. I thought they would be totally separated from eachother... ? Only after re-disabling the physical SIM again, the internet comes back.
What might also be interesting, I am using the Dutch provider KPN for my eSIM (Business) and HollandsNieuwe (Vodafone) for my regular SIM. The reason I have two different carrier networks is quite obvious, if one network is down, most of the time the other one still works. Also abroad it is handy to have different networks.
Could this be a 'battle' between the two SIM cards? I have never had these issues with my OnePlus 5 before. Never. The only thing that changed is that for the Pixel I use eSIM because it only has one physical SIM slot. I did order a physical SIM for the KPN network, but the other one does not yet support eSIM so I am looking into a change of provider if it could be a last resort. I really don't like going to stock Android, as it is so much work setting up everything again. I hope we can just resolve it on GOS :)
