I don't use Android Auto, so I usually only skim discussions that have Android Auto as a topic. However, I seem to remember that it basically works pretty well. You'll find lots of helpful discussions about Android Auto in the forum.
I can well understand that you're nervous - that's why I sent you the "escape link": You can always just go back to stock OS if you don't like GrapheneOS. Web installer makes it really easy.

Personally, I think you're doing quite well with your attitude because with sandboxed Google Play and maybe installing other Google apps (which you may use, i don't know but sounds like) the switch is not so perceptible. And even with your more relaxed approach, you're gaining quite a lot regarding privacy and security.
I think it's better and often more sustainable to switch slowly than to go all in with privacy. It could quickly become exhausting if you're overdoing it. And if you want to level up your privacy settings, create profiles, tweak settings, etc., you can always do that later - but you don't have to! And that's not cringe, it's just right - your phone has to suit you, not you your phone.
I only partly agree with brookie229 - maybe GrapheneOS is not for you - but you will only really find out if you try it yourself - not if you take over what others (including me) are writing.
