APN and Mobile Data Issues

I'm having issues with mobile data not working on a Pixel 6a. I looked at the default APN settings and they're slightly different than what my cell service provider has posted (Koodo). Why is that ?
I haven't had an issue like this since I installed GrapheneOS (it's been around a year).

When I pressed on the + sign and created a new APN profile (using my service providers settings), I saved it but was not able to switch to it. It was showing up on the list of APN's but the GrapheneOS system wouldn't let me select it.

I reset my Mobile Network Settings and Bluetooth/WiFi and restarted my phone. This worked for a few minutes, where I was able to use the mobile data but it seems to fail randomly. It works for a bit, fails for a bit and then comes back online for a bit...and so on.

What is happening here ?

Has anyone experienced this ?

uncoated I am not familiar with the service provider, but after searching I would think that it should work without issue.

Have you tried modifying what's already there instead of adding new entries?

If I were in your situation, I'd also try changing some settings in Settings > Network & internet > SIMs. I'd confirm mobile data is on and try different options under "preferred network type", toggle 2G on/off, etc. I think it's unlikely to work, but might be worth trying.

I tried searching the forum here and our chat rooms, and I only found one mention of this mobile provider. Another person was having the same or similar issues. I'm wondering if there might be some sort of incompatibility issue here, but I did see that the provider sells Pixels, so I am unsure what to make of it.
